Key Responsibilities:

• Oversee all butchery operations, ensuring the highest standards of meat and seafood preparation
• Maintain strict hygiene, safety, and quality control protocols in the butchery section
• Collaborate with the Executive Chef and culinary team to develop seasonal menus and specialty cuts
• Manage inventory, storage, and portion control to minimize waste and maximize efficiency
• Mentor and guide junior kitchen staff in proper butchery techniques and best practices

Key Requirements:

• Proven experience as a Butcher or Chef De Partie in a luxury hotel or fine dining environment
• Strong knowledge of meat cuts, fabrication, and butchery techniques
• Excellent organizational skills with attention to detail and quality
• Ability to work in a fast-paced, high-pressure kitchen environment
